Cozy Comfort for Chilly Evenings

Chilly evenings in TX have officially commenced, leaving me longing for a good dish to warm me up, whilst keeping with my fast paced, healthy lifestyle. Tonight, I put together a very easy vegetable combo, immersed in organic tomato basil sauce. This generous medley is fit for the topping of any pasta of your choice; or in my case, heavily poured over spaghetti squash for the ultimate enveloping.

Here’s what you’ll need (you can always add or remove the following, as your heart desires)…

1 garlic bunch
1 red onion
1 yellow onion
1 fennel bulb
1 red pepper
1 green pepper
2 crates of baby bella mushrooms
2 large (25.5oz+) jars of sauce (I use Muir Glen Organic Tomato Basil Sauce)
Sea salt & cracked black pepper

Chop / dice all of your veggies and throw into a giant pan for the caramelizing (add the garlic and mushrooms last, as to not burn) on med-high heat, using a good extra virgin olive oil, tossing frequently. This should take about 5-7 minutes to completely cook and blend – salt and pepper to taste.

While your veggies are caramelizing, dump both jars of sauce into a separate pan and begin warming on medium heat. Once your veggies have cooked, combine with the sauce and cover on low heat for about 5-10 mins.

Serve over pasta, squash, or use as a hearty dipping/dunking sauce for a bread of your choice. The most difficult part of this dish is deciding what you’re going to smother and devour! Whatever you decide, you will not be disappointed. Here’s to warm bellies and hearts – enjoy!

Oh, and this dish pairs perfectly with wine … naturally.  🙂
