Kicked Up Caprese

Oh, how I love all things Italian food and the delicious indulgence of gargantuan pasta, meat, and sauce platters. That being said, I keep my inner glutton at bay by balancing those yummy Italian flavors we all crave with healthier options and some added goodness. Please note, indulgences still occur (and should); however, this dish still gives you a little taste of Italy when you’re being carb conscious and looking to incorporate some greens.

Here’s what you’ll need (portions are not listed, as you may add as much or as little of something as you’d like) …


– Arugula
– Red & Yellow Cherry Tomatoes
– Mozzarella
– Avocados
– Basil
– Olive Oil
– Sea Salt & Cracked Black Pepper
– Wine (to sip whilst cooking and eating)

Start by halving all your tomatoes. Put them in a bowl and drizzle with olive oil, sea salt, and cracked black pepper – toss together and let them settle. Next, cut up your mozzarella and avocado(s). Then, break out the greens. Cover a plate in a healthy portion of arugula and throw on your tomatoes, mozzarella, and avocados. Top it off with fresh basil leaves and another drizzle of olive oil.

Voila! Dig in, relax, and enjoy!
