Caliente Brussels

Brussel sprouts get such a bad rep! If you’re looking to spice up your entree with a guilt-free, nutrient-rich option, you must try this easy breezy, thrown together recipe.

Here’s what you’ll need …

1 1/2 lbs raw brussel sprouts – roughly chopped
1 fennel bulb – roughly chopped
1/2 yellow onion – diced
1/2 garlic bulb – diced
1 lemon
Dried red pepper flakes
Sea salt
Black pepper
Extra Virgin Olive Oil (EVOO)

Dice your onion and garlic and caramelize in a pan with EVOO, salt and pepper on med-high heat. After a few minutes, add your fennel and stir together frequently for a couple minutes.

When your onion, garlic, and fennel has browned a bit, throw in your brussels and toss for another few mins. Squeeze an entire lemon over top to keep the green color of your brussels, seal in nutrients, and incorporate some citrus tart to the dish. Stir it up and add some dried red pepper flakes – I put in a good handful for some heat (caliente), but gauge your handful, based on your level of spice tolerance. Turn the heat to low and cover for 3-5 mins until the brussels are softened and still crunchy.
